I have made this salad a couple of times recently and it is shaping up to be my new summer go to. Last night's version included a handful each of kale, rocket and lettuce and some coriander from my garden (mint or parsley would be great too) along with two chopped tomatoes, half a red onion, half a cucumber and an avocado. I then added a packet of rice and quinoa and a pan fried chicken breast. I just made a simple dressing with some lemon juice, olive oil, salt and pepper. I like it quite lemony so just play around to get the flavour you want.
I love being able to go out and grab whatever I want from my garden to use in here and add whatever other bits and pieces I have in the fridge. The rice and quinoa makes it filling enough for a main meal and there was enough for all of us for dinner, and for Bruce to take leftovers to work the next day.
